Teriyaki Meatloaf
10 lb ground beef
10 Eggs; lightly beaten
2.5 c ground pork rinds
2 cups oats
2.5 c Green bell pepper; chopped- or other vegetable (Bok Choy? Should be diced very small)
5 Onions; chopped small
10 Carrots; grated (sweet potato would also work)
10 Cloves garlic; crushed
10 tb Soy sauce
10 tb Brown sugar
10 tb Lemon juice
parsley; chopped
2 ts Ground ginger
2 teaspoons Chinese Five Spice
2.5 c Brown sugar
2.5 c Soy sauce
Combine all but last 2 ingredients. Form into 10 loaves, wrap tightly, bag, freeze.
To prepare, thaw. place in a 9 X 9" baking dish. Bake at 350 degrees F for 30 minutes. Remove from oven and drain off grease. Mix together the brown sugar and soy sauce and pour over meat. Bake for 30 more minutes and remove meat to serving platter. Pour sauce over sliced meat loaf or serve separately.
This made ten medium sized meatloaves. I thought they were delicious. The sauce was tasty, but not really worth serving separately. It might have been good with rice. It served 11 of us tonight, but we had some generous side dishes to eke it out, and I was worried that there might not be enough to go around for our guests so I ate sparingly and urged more potatoes than meatloaf upon the youngest two children.
I bought Vidalia onions since they are in season and we love them. But the HG says our Vidalia onions were having an identity crisis because they weren't as sweet as usual.

Never seen that ingredient in meatloaf... or anything else, come to think of it. Do you suppose that was added in lieu of bread crumbs for a low-carb option, or something?

Why, yes, yes I do.=) I substituted the oatmeal and the pork rinds for bread crumbs and crackers in the original because the Cherub is allergic to wheat.
Atkins dieters often use ground pork rinds in recipes that call for crushed crackers or bread crumbs. When I first read such an Atkins recipe a realized that this was a godsend for us, because the Cherub is also allergic to corn. When the rest of us have taco salad with corn chips, she has it with pork rinds.
Ahh, makes sense.
