Rainbow Salad for Winter

Set out a cup of frozen peas to thaw.

Then mix this dressing:
1/3 cup of oil
2 Tablespoons apple cider vinegar
1 teaspoon brown mustard
dill weed to taste (a teaspoon or so)
sprinkling of sugar (like just a pinch)
same of salt, paprika, and even less pepper

Toss these ingredients into a bowl and then gently mix in the dressing:
3 leeks, cut into thin ribbons (use your scissors)
1 cup chopped celery
1 cup thawed peas
2 peeled oranges, sliced thin. You could also just drain a couple cans of mandarin oranges, which are inexpensive at the discount grocer's and the dollar store.
1 red onion- the recipe calls for sliced into rings, but we don't like that much raw onion in one bite, even though it is prettier. So we dice the red onion, or dice a sweet yellow onion if they are in season.
Mint leaves (we think it's better without mint)

You can serve this immediately, or you can let the flavors blend for a few hours before serving. Make it in a clear glass or crystal salad bowl, because it is so colorful and pretty you'll want to be able to see it. Makes a very cheery splash of color which is most welcome in the middle of winter (I am not talking to you people who are staking up your tomato plants).

Updated to note: We had this for a side salad a couple days ago, and we had some leftover, plus we had some leftover roast turkey. The Equuschick whipped up a batch of her home-made mayonaisse, and then she combined some mayo, diced turkey, and the rest of this salad and it was outstandingly delicious.

Perhaps this goes without saying,and in that case ignore it ;) but when you post recipes, does that mean you tried them and your family liked them? I sometimes look at them and wonder if my children would like that. If all of you liked it, then I might try it, though. Perhaps you could include your families reviews with the recipe. I think you have done that a couple times before. I am much more likely to try those recipes.

It wouldn't even occur to me to post transcribe a recipe none of us liked, nor would it have occurred to me to transcribe a recipe I've never tried unless (like the copper pennies), I wanted to know what somebody else thought of it.

With nine of us, of course, we aren't all going to like the same things. But if I transcribe a recipe here, I think it's safe to assume that a lot of us did like it.

Now the vintage recipes, the ones where I just scan in an image from a vintage cookbook- those are different. They are easy to post. But I 'm not often going to take the time to transcribe something almost none of us liked.=)

The Rainbow salad, as I recall, was liked by most of us except Jenny (who is my pickiest eater) and maybe the FYG (who comes in next for the picky eater awards).
