Curried Bean and Rice Salad

Curried Bean and Rice Salad
Combine about four cups cooked black eans (approximately 2 cans)
4 cups cooked rice
1 cup sliced celery
½ pound diced turkey ham or ham
Whisk together in a separate bowl:
1/3 cup red wine vinaigrette dressing
2 tablespoons snipped green onions
1 tsp curry powder
½ teaspoon ground cumin powder
Pour over the bean and rice mixture
Makes 9 cups. Serve with a few cubes of cheese and some fruit on the side.
