Too Hot to Cook

Some things we do when it's too hot to cook:

Cook anyway, but we use the electric roaster or the crockpot. And we put them out in the garage so they don't contribute heat to the house.

Eat main dish salads like Chili Corn salad (made with frozen corn), one of these spring salads, or one of these.

This is an acquired taste, but seriously, one of my favorite lunches ever on a hot summery day is a bowl of drained, diced tofu, snips of green onion, and a liberal splashing of Bragg's Amino Acids. Mmmmm. Refreshing!

Flour tortillas spread with a mixture of cream cheese, sprouts, bacon or diced lunch meat, and dill and/or garlic. Roll. Slice into pinwheels or just eat a whole one.

Make a pea salad (there are a gazillion recipes and variations you can google) using an unthawed bag of frozen peas. Mix up your salad and let it set for half an hour or more.

Green Smoothies


A vine ripened tomato, slightly hollowed out and filled with tuna salad

cucumbers and spinach dip

diced fresh tomatoes and salt

Celery or Bok Choy stuffed with cream cheese or tuna salad

diced turkey ham, crackers, and cheese

Pretzels, cheese cubes, pickles, diced turkey ham
