Finding a shortfall in the budget this week? Too much month and not enough money? The grocery money had to be diverted for car repairs, or the children suddenly had a growth spurt and they all need new shoes yesterday.
This meal isn't necessarily gourmet dining, but it's a lot better than ramen noodles or a bolw of rice in my opinion and it is a terrific budget stretcher:
The recipe for corn tortilla wraps is here. They are more like a sort of corn meal pancake or crepe than a tortilla, but they're very tasty.
Fill with:
Lentil rice tacos
Any mixture of cooked beans, onions, and peppers- kidney beans, pinto beans, anasazi beans, black turtle beans- cook them soft and mash them up a bit- season to taste.
Burrito filling: brown a pound of ground beef, a diced onion (red is tasty IF you have it), some pepper, and some chili powder and garlic salt (if you have it).
Drain, stir in about 4 ounces of tomato sauce and about two cups of refried beans or mashed cooked pinto beans (the second is cheaper), cook, stirring frequently, until heated through.
Put in the corn tortilla wraps above or in flour tortillas if you have them.
Have these as is, or, if you have it:
shredded lettuce
cheese
salsa
diced green onions
cilantro
sour cream
If you don't have these things on hand, do without.=)
