Frugal Eating While Traveling

That's what my Frugal Hacks post is about this week.

Here's a meal we've been eating in the car every week recently (we eat dinner while driving 45 miles to midweek Bible study in another time zone- we have to leave by 5 to get there by 7, but we leave there at 9 and come home at 9):

This recipe for biscuits- it's better than others because it is soft and more workable. The recipe calls for kamut flour, but we use freshly ground whole wheat flour.

Line muffin tins with the biscuit dough- it's going to be the crust for a quiche you can eat with one hand.


Mix 1 1/2 cups grated cheese and about 2 cups of diced meat- we've used shrimp, crab, turkey ham, and hotdogs (not all at once). Sprinkle these in the bottom of each muffin cup

combine:
3 eggs
1-1/2 cups milk
1-1/2 teaspoons dill weed
3/4 teaspoon salt
pepper to taste
garlic


pour into muffin tins just below the biscuit dough tops. Bake until solid, about 20 minutes in a 350 degree oven.

I think these should freeze well and they could be filled with a mixture of cheese, diced olives and onions, seasoned with mustard for a tasty cold snack. We'll be trying it when we take our road trip later this month. We;ll let you know how it works.

  1. Ah, the joys of living on the time zone border. We live in the Central zone but my dh works in Eastern so we leave our clocks on Eastern time. Now that I'm working in Central zone, I leave for work (substitute teaching) at 8:30 and arrive at 7:45. School is out at 3:00 and I arrive home at 4:15. I really kind of like it because I like waking up at 6:30 instead of 5:30. ;)

  2. One snack I loved while growing up (before car A/C became standard) is frozen grapes. You buy them when they're in season, pick them off the stems, and wash and dry them. Then just throw them in freezer bags and chuck them in the freezer. It's like soft, flavored ice cubes and great for hot trips.

    My family usually did sandwiches, and the trick there is to toast the bread if you're going to pre-assemble.
