Using crockpot recipes for once a month cooking is the fastest way I know to get a bunch of meals in the freezer, because if you choose the right recipes you do not even have to do any cooking ahead of time- you just quickly bag the ingredients, label and freeze. Thaw in the fridge the night before, and then cook as suggested, or cook all day, frozen, until done. This works so well that we have managed, between me and three teens, to get 24 meals for ten people each ready to go in the freezer in about two hours.
On Sunday mornings we often put a whole pork loin in our crockpot still frozen, and cook it on low for 12 hours, then add barb-que-sauce to it when we get him after church Sunday night, and we have it on buns.
Here's another easy recipe:
Polish Sausage and Pineapple
Combine one package of diced polish sausage with two cups of pinapple chunks (we use frozen) and 1/4 brown sugar. Put in freezer bag and label.
Defrost, put in crockpot and cook for 6-8 hours, serve hot with cole-slaw and apple wedges on teh side.
Crockpot Garlicky Brown Sugar Chicken
1 1/2 pounds of chicken pieces
1 cup packed brown sugar
2/3 cup apple cider vinegar
1/4 cup lemon-lime soda
3 tablespoons minced garlic
2 tablespoons soy sauce or Bragg's Amino Acids
Pepper
Combine all ingredients in a bag. Freeze. Defrost and cook on low for 6 to 8 hours.
Crockpot Jambalaya
Combine in bag:
one package of frozen diced peppers and onions (do not defrost first)
one can stewed tomatoes
1 t. minced garlic
2 tablespoons minced parsley
2 teaspooons thyme and oregano
1/8 t. cayenne
1/2 salt
1 cup diced polish sausage
two raw chicken breasts, cut into bite sized pieces.
1/2 pound frozen shrimp (don't defrost)
Label bag and freeze, On cooking day, thaw slightly, dump in crockpot and cook on low 9-10 hours, or on high for 5. Cook rice and add one or two cups of cooked rice during the last half hour.
