Easy Topping for Breakfasts and Desserts

This doesn't really have a name. You can have it for breakfast, for a snack, or adapt it for other recipes and even use it for dessert. It's slightly crunchy, and very yummy. If you like toffee or butterscotch type flavors, you'll love this no matter what you think of the ingredients. They are:

1 stick of butter (1/2 cup of fat, basically. Subsitute as needed, using coconut oil, margarine, shortening- but not the fat from your meat cooking)
3/4 cup of brown sugar (raw organic sugar with a touch of molasses would work)

Melt that together and then add a pinch of baking soda. Heat over stovetop until mixture bubbles. Stir in 2 cups of rolled oats (not instant). Spread in a baking pan and bake at 350 for ten minutes.



OR-

Breakfast: Instead of spreading it in a pan and baking it, spread this over 6 or 7 sliced apples and bake for 10 to 15 minutes (this recipe is from the deep mists of time when we only had five children and they were all under 9- so that's about how many this serves)

OR-

Snack: save the oatmeal topping in a jar once it's cooled. Use it to top raw apples or other fruit for a snack.

OR-
Dessert: This is a delicious ice cream topping, and it's also a good topping for cobblers and dump cakes. Sprinkle it over coffee cake.

  2. Frugal tip:
    When we have a batch of apples that are going soft, we chop them up and put on this topping. It's almost identical to apple crumble, and we've "saved" the apples from ending up in the garbage (I hate wasting food!).
